A tapered Indian-style rolling pin is preferred but not required. If your rolling pin is sticking to the dough, rub a bit of flour over the pin.
- Put a large, thick-bottomed griddle or frying pan over medium heat with a bit of oil or cooking spray. A tawa or cast iron skillet work well for this, but you can use non-stick too—though you never want to heat up a non-stick pan with nothing in it.
- When the pan is hot, add a piece of rolled dough. Cook until air bubbles start to inflate the dough, about 1–2 minutes.
- Dip the corner of your spatula in some of the remaining oil and gently spread a drop over the uncooked side of the thepla.
- Flip and cook the other side, adding a drop of oil to the top. After air bubbles start to rise again (no more than a couple of minutes), flip once more to ensure no raw dough remains, then remove from heat onto a plate lined with paper towels.
- Repeat steps 8–10 until all thepla are cooked.
- Serve hot, alongside chai and sweet or spicy pickles.
