- After brine time, Heat oven to 225... option,dry pork pieces, dry rub and rest 4-8-24 hours. Sear fat in skillet or on cast iron grill. place quartered in an instant pot, pressure cook 1hr 15 min, add 8 oz dr pepper., natural release. Pull apart.
- Pat pork dry, cover in appropriate amount of liquid smoke. Dry rub the pork thoroughly. Reserve some dry rub for final serving.
- Put in large pan in oven
- Cook until internal temp is 200..about 1.5 hours per pound, around 15 hours
- Turn off oven and let rest in oven until 170 degrees...about 2 hours. If not enough drippings, cover with foil to keep from drying out.
- Shred, stir in remaining dry rub and appropriate liquid.
- Serve and enjoy.
